The Eldorado’s Assistant Executive Chef, Robert
Hesse, has already put his stamp on the menu at The Brew Brothers and now he’s
remaking the menu at the hotel casino’s signature restaurant, Roxy.
Chef Hesse has amassed a wealth of experience cooking in numerous kitchens
across the country, including “Hell’s Kitchen,” FOX’s cooking reality show with fiery chef,
Gordon Ramsay where he was a fan favorite during seasons five and six.
It was Hesse’s experience – more so than his fame – that made Gregg Carano,
vice president of corporate food and beverage at the Eldorado, take notice. Carano
noted that being well rounded was a perfect fit for all the different restaurants and
cuisines at the Eldorado.
“When we tasted his food and saw his creativity and his leadership skills, we
knew we had to hire him,” said Carano. “Our food is our star at the Eldorado and we’ve
always had incredible chefs. Big Chef Rob makes a great assistant to our executive
chef, Troy Cannan. His food speaks for itself.”
At The Brew Brothers, Hesse applied his motto “never trust a skinny chef” to
items like the Hog Wild Pork Wings, signature burgers, creative entrée salads and the
hand-tossed, wood-fired pizzas.
At Roxy, he’s employing a different kind of indulgence with his take on comfort
food fine dining. The new items showcase a creative twist on familiar dishes including
extravagant entrees, decadent desserts and over-the-top tastings for two. Above all he
wants guests to have a dining experience.
