Troy Cannan
Chef Troy Cannan joins the Eldorado Hotel Casino as Executive Chef of the property’s eight award-winning restaurant and all
food operations. Cannan is no stranger to the Eldorado Hotel Casino, having served as The Vintage Chef for seven years which led
to his role in opening the Eldorado’s Roxy in 1997. Cannan’s responsibilities as Executive Chef at the Eldorado Hotel
Casino include coordinating all food throughout the property, overseeing all cooking operations, planning meals, developing menus
and supervising the entire food preparation, stewarding and office personnel.
Though Cannan has no formal culinary school training, he has 26 years of on the job culinary training, working and supervising.
Cannan’s culinary career began in Tonopah, Nevada where he ultimately became Executive Chef at Station Casino. Following his
work in Tonopah, Cannan worked at some of Northern Nevada’s dining staples, including opening Famous Murphy’s in 1986,
Adele’s in Carson City and one of his most notable accomplishments, owner and Chef of LuLou’s Restaurant and Bar in 1999.
Cannan has done it all, ranging from short order cook to high end chef at some of San Francisco’s notable restaurants including
Bistro M, Bizou, Le Scene and Boulevard.
