Celebrate Easter at the Eldorado with Brunch and Dinner celebrations at 8 award-winning restaurants.

The Buffet is serving up Champagne Brunch favorites like Eggs Benedict Florentine, Banana Fosters French Toast, Belgium Waffles, Fluffy Scrambled Eggs, Crisp Bacon, Link Sausage, Cheese Blintzes’ with Blueberry Sauce. The carving station is serving up hot Roast Prime Rib of Beef Au Jus, Roast Turkey and Honey Mustard Ham.

For hearty tastes, sample entrées such as Italian Style Roast Leg of Lamb, Broiled New York Steak with Wild Mushroom Garnish and Slow Baked Game Hen. The Eldorado’s famed Mushroom Ravioli with Porcini Cream Sauce, Stuffed Pork Loin with Italian Meats and Pesto and Blackened Grilled Filet of Salmon with Corn Salsa round out the abundant menu. Peel and Eat Shrimp, Italian Antipasto Platters and Smoked Salmon with Cream Cheese are also included in the 200-foot buffet line. A wide variety of specialties, salads and an array of delicious bakery fresh desserts are yours for the choosing. Easter Champagne Brunch will be served from 8 a.m. to 3 p.m. Buffet prices are $20.99 for adults, $9.99 for children under 10 and $17.99 for Gold Card members and above.

Roxy offers a gourmet Easter Egg appetizer of Poached Duck Egg, Croutons and Duck Confit on a Frisee Salad. Roxy’s main Easter entrée is a Slow Roasted Leg of Lamb served with Braised Cabbage and Rosemary Potatoes. The Easter special at Roxy is available for $30. Roxy is open for dinner from 5 p.m.

Indulge in an Italian Easter Dinner at La Strada starting at 5 p.m. Appetizer specials include In House Cold Smoked Swordfish Carpaccio with Sicilian Caponata ($12) and Dry Cured Beef Bresaola, Grilled Asparagus, Arugula and Pecorino Toscano Dressing ($8.) Entrée choices include Linguine with Cream of Broccoli, Toasted Pinenuts, Smoked Swordfish and Lemon Oil ($15,) Grilled Wild Striped Bass with Lime and Rosemary served with warm Borlotti Bean Salad ($24) and Wood Oven Roasted Rabbit, Fresh Herbs and Garlic served with Mediterranean Potatoes Gratin ($22.)

The Prime Rib Grill offers an Easter special of Braised Lamb Shank served with Mashed Potatoes, Sugar Snap Peas and Mint ($19,) Tivoli Gardens is serving Roast Colorado Leg of Lamb with Roasted Peppers, Asparagus and Rosemary potatoes ($13.50) and The Brew Brothers offers a Roast Leg of Lamb Sandwich of Thinly Sliced Lamb, Goat Cheese, Roasted Peppers and Arugula on Eldorado Foccacia with Rosemary Fries ($9.)

Wine Dinner Series

Enjoy an evening of gourmet dining and exquisite wine during the first of the Eldorado’s Wine Dinner Series, March 27, 2009 at 7 p.m. The first dinner features the fine wines of Ferrari Carano Vineyards and Winery and is available for $50 per person. Or, make it a romantic rendezvous with our Wine Dinner Room Package starting at just $75 per person, which includes Standard accommodations and wine dinner reservations for two.
Roxy Room Chef Jakon Tolhurst will prepare a four course pairing featuring Seared Diver Scallops with Celery Root Puree and Herb-Ocean Nage (’05 Ferrari Carano Tre Terre), Balsamic Barbequed Quail with Wild Mushrooms and Red Wine Butter (’06 Ferrari Carano Merlot), Mint Dusted Lamb Chops served with Creamed Spinach in a Port Reduction ( ’05 Ferrari Carano Tresor) and a dessert of Chocolate Strawberries and Truffles (’07 Eldorado Noir).

Tivoli Gardens Specials

The Eldorado’s Tivoli Gardens offers $5.99 meal deals and $4.99 graveyard specials seven days a week. The 24-hour coffee shop serves lunch and dinner specials from 11 a.m. to 6 p.m., daily. The daily menu features of range of international favorites including Chicken Farfalle in Asiago Sauce on Mondays, a choice of Spice Beef or Chicken Tacos on Tuesdays; hearty, homemade Eldorado Meat Ravioli served with Garlic Bread on Wednesdays and tender, Smoked Pork Loin topped with sweet& tangy pineapple sauce on Thursdays. On Fridays, Tivoli Gardens serves fresh Fish and Chips with Coleslaw, Marinated Tri-Tip Steak with Vegetable Fried Rice on Saturdays and Fire Cracker Salmon on Sundays.
